Huw Gott

huw gottFrom a long line of hard drinking butchers, Huw combines his genetic obsession for all things meat and drink at Hawksmoor, his British steakhouse and cocktail bar. He is also an owner of Green & Red, a Mexican restaurant and temple to tequila. Along with business partner Will Beckett, he also runs Underdog Consultancy, a consultancy service for bar and restaurant operators – from start ups to well established brands. He was voted No.39 in the 2009 Theme Top 100 most influential figures in the UK drinks industry.

Tina Norden

tina nordenTina trained as an architect at the University of Westminster, continuing her studies at the Royal College of Art, where she obtained a Masters in Architecture + Interiors. She joined Conran & Partners in 1997.  She was voted No.73 in the 2009 Theme Top 100 most influential figures in the UK drinks industry.



Andy Pearson

andy pearsonAfter spending fifteen years behind the bar, some twelve of which were spent managing a variety of London’s finest drinking establishments, Andy is now the director of Intoxicology; a company dedicated to turning that experience into valuable advice for a variety of people from bar and restaurant owners to brand managers, and of course bartenders and consumers themselves. As well as being a co-founder of the Hoxton Pony, he was voted No 25 in the Theme Top 100 most influential figures in the UK drinks industry.

Michael Stewart

michael stewartMichael’s career in the licensed trade began when he abandoned a plan to become a teacher and set up and develop Belfast’s first recognised theme pub, Bob Cratchit’s, then owned by Guinness Northern Ireland, now Diageo, in 1987. Managerial posts there and in other bars led him to join Botanic Inns as head of operations, where he worked with designers and builders to oversee the roll-out of a number of new concepts for Botanic Inns’ Belfast projects, responsible for Apartment, Northern Whig, McHugh’s, The Globe, Ryan’s, and refits in Madison’s, The Fly, McHugh’s and Parador.

Headhunted in August 2003 by Ultimate Leisure (now Premium Bars & Restaurants) as operations manager he was responsible for eight Belfast venues: Bar Bacca, Irene & Nan’s, La Lea, Bambu Beach Club, Potthouse and Advocate, as well as two nightclubs further afield. After accepting a redundancy package from Ultimate Leisure in July 2007 he set up his own consultancy company, Bar Czar, which specialises in hospitality sector solutions, project management and training. Ultimate Leisure was his first client. Michael was chairman of The Belfast Licensed Vintners Association 2006 – 2007 and also 2007 – 2008. He was voted No.53 in the 2009 Theme Top 100 most influential figures in the UK drinks industry.

Eric Yu

eric yuHong Kong-born Eric started his professional life as a chartered accountant in London, but left to join The Pheasantry Group, one of London’s most progressive restaurant and bar groups, as financial controller. After three years he left in 1991 to set up his first venture and what was eventually to become The Breakfast Group.  He was voted No.6 in the 2009 Theme Top 100 most influential figures in the UK drinks industry.
